Designed as a party-sized prepared mix that's loaded with flavours associated with holiday season, making it perfect for hosting a festive gathering. Any leftover syrup you can use for morning drinks, sweets, or for another batch of bikinis.
Bikini Recipe
Makes enough for 10 guests
Ingredients for the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (makes 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
To prepare the Syrup: Put all the items into a pot, heat until it reaches a light boil, agitating until the sugar dissolves. Then, turn off the burner and let it to reach room temperature fully. Pour to a sterilised bottle, seal keeping it in the fridge, it will last for up to a month.
For the Batch Mix: Combine all the liquid ingredients into one large bottle, allow it to infuse for 60 minutes, then pass it through best through muslin, making it perfectly clear.
To serve: Measure 85ml of your batch mix into your cocktail shaker packed with ice, and agitate gently for one minute until cold. Strain into an cold coupe glass or similar, garnish with some cranberries and complete it by giving it a quick spritz of mandarin oil above the glass.
